These Asian Beef Meatballs are packed with flavor and work for so many different dinners. Serve them with fried rice, Asian Noodle Salad, or Healthy Chow Mein.

Ever have one of those days where it just feels like everything is going wrong? You know those days when your hair just won't work out right, you spill coffee all over yourself, your phone dies in the middle of the afternoon with no charger in site, and on and on? Well, I had one of those days recently. I won’t bore you with all the details, except, okay just one more; it’s part of the story, I promise.

After all of these things happened right in a row, I tried to find a way to relax and de-stress. So, I decided to walk to the grocery store about a mile from my apartment to buy chipotles to make these Chipotle Meatballs, one of my favorite meals. (Yes, food definitely always cheers me up.) Except — get this — they were out of chipotles. Ugh! Usually, I feel like no one buys them but me! The cans are typically dusty, and there will always be a few left on the shelf, seemingly just for me.

But today of all days, they were sold out. Just my luck, right? But as it turns out, it actually was lucky because it forced me to create a new recipe with the ingredients that I did have. A recipe, I might add, that just so happened to turned out to be quite delicious.

These simple Asian meatballs (inspired by a Cooking Light article) are a great, simple weeknight meal. We both ate a generous helping of meatballs served over teriyaki veggies and some cauliflower rice. I also think these would be simply grand if made with ground pork, chicken, or turkey as well.

Ways to Serve Asian Meatballs

Here's where I challenge you to think about meatballs in a different way. They are not just for topping on pasta. These delicious balls of meat are also great on:

  • Adding to a tortilla, taco-style. (You knew I was going to go there though right?) Make an Asian-inspired taco by adding two or three meatballs (depending on how big they are) to a soft corn or flour tortilla. Top with some shredded cabbage, and sesame seeds for some crunch and then add some Sriracha for a little extra kick.
  • Make an Asian Meatball sub. Layer the meatballs on one side of a sub bun, then top with your favorite toppings. Anything goes here — kimchi, cabbage, pickled vegetables, bok choy — raid your fridge and see what you can come up with. I would eat this cold or warm.
  • Stir fry up some veggies and top with meatballs. It can be that easy!
  • Make up a big batch of this Asian Peanut Slaw and toss in a few meatballs for a delicious, low-calorie dinner. Slaw is just a fancy word for "salad" — it's okay to eat it in bigger portions.
  • Don't make meatballs with this mixture but instead make burgers! You've already got the meat combined, just patty it up a little bigger and grill. Top with anything mentioned above and you've got yourself an amazing Asian burger.
  • Make Asian lettuce wraps with big pieces of romaine. Top with meatballs and your favorite condiments for a low-carb dish.
  • Swap the chicken in this Asian Noodle Salad dish for meatballs.
  • Zoodles! Add meatballs to a big batch of warm Asian Zucchini Noodles. Regret nothing.

Side Dishes to Serve with Asian Meatballs

While you could make a whole meal out of sides (which I do quite often), it's good to include some protein in there to keep you full. If you're already making these meatballs, why not add one of the following side dishes to round out your meal?

  • The Asian Peanut Slaw (linked above) is a great side dish to add to these meatballs.
  • Cauliflower Rice is easy to make, low-carb, nutrient-dense and so easy!
  • I love fried rice, but I love it more when it's good for you, like this Healthy Fried Rice recipe that would go great with meatballs.
  • Grill up a side of vegetables with an Asian-inspired marinade.
  • Have some leftover Asian Meatballs? Add them to this an Asian inspired pasta salad and pack it all up for a healthy work lunch.
  • Love a little crunch with your protein? Try making these Baked Potato Chips for a healthier version of the typically fried potatoes.

Why Do My Meatballs Fall Apart When Cooking?

Has this ever happened to you? You make the meatballs according to directions, only to have it completely fall apart when you're cooking them? If not, congrats! It's happened to me a lot. So much so that I felt the need to address it here. Usually, they fall apart because they are too dry and not bound together enough or mixed thoroughly. Or they could be too big. The smaller the meatball, the more likely it is to stay together.

If your recipe calls for a "binder" (like an egg) be sure to use it. I didn't feel the need to add one to this recipe because these have enough wet ingredients to hold together quite nicely without the egg. But feel free to add one if you are encountering difficulties.

However, it's important that you follow the directions, mixing up the ingredients before adding the meat. This will ensure your ingredients are thoroughly incorporated into the meat equally. Otherwise, you could end up with a big chunk of ginger here, too much soy there...or even, a messy meatball that falls right apart.

This easy Mexican Shrimp Skillet will be your new favorite weeknight dinner. With seasoned shrimp, black beans, corn, and tomatoes - this recipe is filling, hearty, and healthy. It's a favorite shrimp recipe around here along with these Blackened Shrimp and Shrimp Fajitas

With summer on the horizon, I have simple and easy meals on the brain and this Mexican Shrimp dish fits the bill perfectly. From start to finish, it's ready in just 15 minutes and it's a meal that everyone loves. Plus with so many different ways to serve it and delicious leftovers, it's a meal you can repurpose all week. 

To really pack in the flavor in this dish, I love to start with sauteed onions, poblano peppers, and garlic. This creates a super flavorful base with just the right amount of spice from the poblano peppers. Next comes the shrimp. Cooking it with the onions and peppers ensures it will have tons of flavor as well.

Then to keep things really easy, I used taco seasoning as the next layer of flavor. You can use a store-bought option or make your own. Taco seasoning has spices like cumin, paprika, chili powder, garlic powder, and oregano so it's an easy way to add tons of flavor in one step. Look for a version that is low sodium and doesn't have a lot of additives. 

Finally, to finish off the dish, I added black beans, corn, cherry tomatoes, cilantro, and lime juice. So easy and so good. Serve it on its own, over rice, stuffed into tortillas for tacos, in lettuce wraps, or over a big bed of greens for a shrimp taco salad. There are so many yummy options.

Recipe Ideas for this Mexican Shrimp Skillet

This is one of those recipes that you can easily adapt and make work for almost any preferences or just based on what you have in your pantry,

  • Any canned beans will work in this recipe. Make it with black beans, pinto beans, white beans, or even chickpeas.
  • If you can't find fresh cherry tomatoes that look good, use a can of drained diced tomatoes instead. Add extra heat with some diced tomatoes with green chilies.
  • For extra heat, use a couple of jalapeno peppers in place of the poblano pepper. For less heat, you use green bell pepper instead.
  • Add some extra veggies! We love adding diced zucchini, cauliflower, spinach, and summer squash.
  • If you don't eat shrimp, you can use chicken breast or fish instead. Just adjust the cooking time as needed.
  • If you want to make this dish with rice, you have two options. For the easiest prep, just grab some frozen rice. Pop it in the microwave to defrost it and then just fold into the dish with the beans and corn. You can also cook rice on the side and then stir it into the dish.
  • Toppings! This Mexican Shrimp Skillet is calling out for toppings. Add shredded cheese, diced avocado, sour cream or Greek yogurt, diced onions, and anything else you would be on tacos.

Ways to Serve Mexican Shrimp

Once you make this recipe, you will realize how many different ways you can serve it. There are so many different options. Here are some favorites:

  • Most often, I serve this over a bed of brown rice, quinoa, or cauliflower rice. Then I top everything with diced avocado and diced fresh jalapenos.
  • Tacos are another delicious option. Heat up some corn or flour tortillas and scoop this right inside. Add some shredded cheese.
  • For a lighter meal, serve this wrapped up in butter lettuce leaves. Cabbage leaves also work for some extra crunch.
  • Make a delicious taco salad. Start with a bed of coleslaw mix or crunchy Romaine. The shrimp has so much flavor, you likely won't need any extra dressing.
  • Believe it or not, this is really delicious tossed with pasta for a Southwestern shrimp inspired pasta. Cook your pasta, add this on top, and stir together. For a creamy version, add some reduced fat cream cheese as well. It's so good.
  • Add some cheese and turn this into a healthy and filling quesadilla. 
  • Wrap this up in a tortilla with some cooked rice to make a really yummy shrimp burrito.

Should I use fresh or frozen shrimp?

Unless you are buying shrimp right off a boat, then frozen shrimp is your best bet. In fact, almost all shrimp we buy in the grocery store is previously frozen. The "fresh" shrimp in the seafood case, it's probably just defrosted frozen shrimp. Therefore, I usually buy frozen shrimp since it is the most affordable option. Look for one that is already deveined with shells removed for the easiest prep.

How to defrost frozen shrimp quickly?

My preferred way to defrost shrimp is to simply place it in a bowl overnight in the fridge so it defrosts naturally. However, sometimes we don't have time or forget to do that. In those instances, add your shrimp to a bowl in the sink. Fill the bowl with cold water and let the water continue to run into the bowl very slowly. Let the shrimp sit like this for 10-15 minutes and then drain. Dry with a towel to remove the excess water. 

How to make homemade taco seasoning?

This recipe uses taco seasoning to add lots of flavor, fast. You can use a store-bought option or make your own at home. Here is an easy recipe to make your own. You can store it in your pantry for up to 6 months.

  • 3 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp kosher salt
  • 1.5 tsp black pepper
  • Optional: Oregano, red pepper flakes, cayenne pepper

Beef and Bok Choy Stir Fry

This simple,15-minute Beef and Bok Choy Stir-Fry tastes like a classic Chinese dish without all the unnecessary fat and calories. It's packed with thinly sliced sirloin, bok choy, and mushrooms in a savory stir fry sauce. Serve it with some Healthy Fried Rice or Healthy Chow Mein for the perfect Chinese takeout inspired meal.

Do you ever have nights where you can't seem to find even 30 minutes of time to get dinner on the table? Who am I kidding, that feels like basically every night of my life. Some days just bleed from morning to afternoon to night without my even thinking about it and before you know it, it's time to get dinner started and by the time I realize it, I always seem to find myself with less than 30 minutes to get dinner on the table.

So typically I'm left running around while everyone stares at me, ravenous for dinner while I end up staring into the fridge thinking about what I can make in the shortest time possible. The answer? Usually stir-fry! In fact, stir-fry is almost always the answer. Because nearly everything is cooked at a high temperature, it's ready in no time, and it is one dish that everyone loves.

I've found that the key to a good stir-fry is the sauce and it just so happens that this one is packed with flavor. The oyster sauce, soy sauce, ginger, and garlic make a flavorful Chinese-style sauce that works with nearly all proteins and veggies. Personally, I like to pair it with beef, bok choy, and mushrooms to really kick up that delicious umami flavor.

How do you make Beef and Bok Choy Stir Fry?

The first thing I do when making a stir-fry is to cut up the sirloin into strips and the veggies as well. (If you are able to do this beforehand, even better.) From there, I mix up the sauce by adding the broth, both sauces, garlic, ginger, and cornstarch in a small bowl and whisk until it's combined thoroughly.

Next, I add half of the oil to a pan or wok and turn the heat up to high. The beef gets cooked first for 1-2 minutes until it's just browned on all sides. It doesn't need to be done all the way through at this point. I remove the meat from the wok and set it aside.

I add the rest of the oil to the pan (still at hot heat), then add the vegetables, cooking those for about 3-4 minutes until they start to soften. From there I turn the heat to medium and add the sauce to the pan with the veggies, cooking for another 3-4 minutes until the sauce starts to thicken and the veggies get even more tender (but still crisp).

Finally, add the beef back to the pan and cook it for just 1 minute longer or until it's cooked through. Serve right away.

Ways to Serve this Beef Stir Fry with Bok Choy

  • I like to serve this over rice — white or brown, cauliflower or wild, doesn't matter, all rice is good and a little goes a long way.
  • Serve this dish over an Asian noodle, like ramen, udon, soba, or rice.
  • Top low-carb or high-fiber pasta with the bok choy and beef stir-fry and sauce.
  • This would go great over veggie noodles too. Zucchini, yellow squash, sweet potato, or other hardy veggies will do just fine.
  • Eat this as-is in a bowl with a splash of your favorite hot sauce. My preferred hot sauce is Sriracha but you can use whatever you like!
  • This Beef and Bok Choy Stir-Fry is also good over a bed of other roasted veggies. You'll get to eat a big, satisfying dinner and most of it will be nutrient-packed with all those veggies.
  • Top a grain like quinoa with a generous serving of stir-fry.

Ideas for Customizing Beef Stir Fry

The best thing about stir-fries is not only are they quick to put together but they are easy to customize as well.

  • Swap out bok choy, mushrooms, and green onions for whatever vegetables you love or have on hand. Some of my favorite stir-fry vegetables (besides those in this recipe) include bell peppers, broccoli, cauliflower, mini corn, water chestnuts, bamboo shoots, snow peas and snap peas, shelled edamame, asparagus, red or yellow onions, green beans, and shredded red or green cabbage.
  • If you don't want to use sirloin, you can use another thin cut of beef or thinly-sliced chicken or pork.
  • Use shrimp if you want a seafood dish or tofu or chickpeas for a vegetarian dish.
  • You can also have an all-veggie stir-fry, there's certainly nothing wrong with that!
  • Make this dish spicy by cooking with hot peppers such as thai chili or jalapeno slices. Or add red pepper flakes while you're cooking or upon serving. You can also add your favorite hot sauce to the sauce mixture or add it on after you're done cooking.

Tips and Tricks for Making Stir Fries

  • Cut your meat thinly for quick cooking. Diced meat will take a little longer to cook than slices.
  • Cook your meat before your veggies as it will take longer to cook.
  • Also, remember to cut up your veggies about all the same size if possible so that they all cook evenly as well. You'll want the veggies to be tender yet crisp and not mushy.
  • Some veggies, like broccoli and cauliflower, take longer to cook so you might want to give those a 1-2 minute head start on cooking before adding the other veggies.
  • The oil in the wok or skillet will get hot fast, so be sure to add the meat or veggies right away to avoid too much splattering and the possibility of oil burns.
  • Make sure to cut up your vegetables before your meat if using the same cutting board, or use two separate cutting boards (and knives) for cutting up each to avoid cross-contamination. Or, you can wash your cutting board and knife in hot, soapy water before using it to cut your vegetables.

No matter how you slice it, stir-fries are an easy way to get dinner together on those busy nights.
